Egg Free Oatmeal Rolls

This has got to be my favorite roll recipe. Its easy! Its also great if you have an egg allergy in your household.

Oatmeal Rolls


2 cups water
1 cup oats (quick cooking kind or the regular kind – not the instant packet kind)
3 tablespoons margarine or butter
1 tablespoon active dry yeast
1/3 cup warm water
1/3 cup brown sugar, packed
1 tablespoon sugar
1 1/2 teaspoons salt
4 cups flour (depending on the humidity, you can add up to an additional 3/4 cup)

Directions:

In a saucepan, bring water to a boil. Add oats and butter. Cook and stir. Cool to lukewarm. In mixing bowl, dissolve yeast and white sugar in warm water. Add the oat mixture,( about a minute)
sugar, salt and 4 cups of flour. Beat until smooth. Add enough remaining flour to form a soft dough. Knead 6-8 minutes. (This can also be done in an electric mixer.) Place in a greased bowl, turning once to grease the top. (I simply use PAM as the grease.) Cover and let rise in a warm place until doubles, about 1 hour. Punch down. Allow to rest for 10 minutes. Shape into 18 balls. (Instead of using more flour to handle the dough, I spray the counter with PAM. It works like a charm and keeps the dough softer.) Place in 2 greased 9″ round pans or 2 9*9 pans. Cover and let rise until double, about 45 minutes. Bake at 350 degrees for 20-25 minutes.
